Oh So Yummy Crispy Tortilla Pizzas!



These were awesome! And the best thing is you can top them with just about anything. Here's what I put on these:

Thinly Sliced Roma Tomatoes (roasted for a few minutes)
Mini Pepperoni
Green Bell Peppers (roasted for a few minutes)
Onions (slightly browned)
Mushrooms (tossed in with the brown onions for just a few minutes)
Artichoke Hearts (chopped right out the jar)
Chedder/Monterey Jack Cheese Blend
Sprinkle of Pizza Seasoning (I used Chef Paul Prudhomme)

Place the flour tortillas on a baking pan and top with a thin layer of olive oil and then sprinkle with a little cheese. Then I layered all the other ingredients, sprinkled pizza seasoning and topped with another very thin layer of cheese. Bake in a 375 degree oven until the cheese is melted and the tortillas are crispy.

I can't wait to try these with some fresh veggies from our garden :)

Peanut Butter & Jelly Monkey Bread



I tried this new recipe out tonight...yes, for supper :-) and it was delicious! You can get the entire recipe here. I'm all about improvising if I don't have all the ingredients on hand, so I mixed up a batch of Bisquik Biscuits, and instead of heavy cream, I used the new Philadelphia Cooking Creme (Original).

Bread Machine Cinnamon Rolls

Oh So Yummy!

My family has recently been blessed with a bread machine! I've wanted one for some time now and upon mentioning it to my sister-in-law, she gladly gave me the one her family no longer uses.

Well, we tried it out last night, with this oh so delicious cinnamon roll recipe that Money Saving Mom shared on her blog. Not only were they the best cinnamon rolls we have ever eaten, but it was so easy to make.

I'll be sure to snap a picture next time before my family attacks the pan!

What's For Dinner?

This is my family's FAVORITE lasagne. You can find the recipe here. And believe it or not it is very inexpensive to make. This one cost me a little over $8.00. Here's what I usually buy.

1 lb ground meat $1.98
1 cup chicken broth (cans of chicken stock are on sale this week at Walgreens for $.50)
26 - 28 oz of Pasta Sauce (I buy the Hunt's Spaghetti Sauce in the can and can usually find it for around a $1.00)
8 oz cream cheese (I stock up when it goes on sale for less than a $1.00)
12 oz Shredded Mozzarella (I stock up when this goes on sale for around $1.50...can get it for cheap this week at Target)
No Boil Noodles (I buy the Luxury brand from Walmart for $1.72/box and can make 2 lasagnes and still have noodles left over)

Instead of the garlic, basil and oregano it calls for I season with Chef Paul Prudhomme's Pizza/Pasta Magic Seasoning which includes all these and more.
